Not sure how much it would be possible in the UK, but kayaking hunting has been surprisingly successful over here in NZ. I reckon some parts of Scotland it might be possible:

Nice - always wanted to do the Motu. Did the multi-day on the Clarence though.

Plenty of pigs, deer and trout to keep your hunting skills busy out there!

The Motu was great, however I recommend doing it in summer with a tad more water. And take raft support to carry out the deer!
