Wet west paddlefest is fun, plenty of people around to meet up with and boat with. Only two days long, but happens at a time of year when (normally) there's water around, so you could do a longer trip based around it. Have you tried the one that GoPro does? I haven't used it much, as I never get further than copying the footage from the camera into the computer, but it is suppossed to be reasonably good.

I'd say, try to lead as many different people as you can; try to find those who are new to the sport, and actually need leading, rather than just leading a competent group of mates. You'll only be leading on grade 2/3 on the assessment, so it doesn't matter too much if it's a river you know or one y...

Rachets, every time. It's annoying when the bit of string comes loose in a playboat, in a creek boat it could be really dangerous... If really concerned about breakage, carry a spare rachet strap...
