I'd recommend PKH (Mike already linked them) if you were considering Chile. I went on a 2 week trip with them in 2015 and it was excellent.

I'm not sure if January might be a bit late for the rivers around Pucon but they can advise what the best options would be.

Nice video, looks like a great river! I'm off to NZ in Feb for 3 weeks, honeymoon, but I've booked us in for rafting on the Whataroa (as other half doesn't kayak and I will have no gear). Egua, Italy - 2km of steep, pool drop rapids. First time down it takes an age before being able to lap it once you have learnt the rapids. Yep! It's the penultimate drop on the upper section (with more water than summer flows). It's a nice run although it's a shame it has a number of siphons on it due to the rock type.

I've used Riverapp a fair bit abroad but you're right it doesnt appear to have an overall map showing levels which is a shame.

http://www.rivermap.ch/ is useful and does have the overview but unfortunately doesn't stretch all the way to the Pyrenees

Worth checking out MPI as they cover off piste skiing by default in their policy. The Jura mountains are also supposed to be excellent with rain. There are some great rivers in the Jura (Semine, Loue etc) however all are quite low at the moment and pretty rain dependant. It looks like pretty much all the main rapids will be lost aside from perhaps 1-3 and the minus rapids. A real shame.
