Is the foam polystyrene or polyurethane? If its polystyrene then only use epoxy as a resin to wet out the fibreglass cloth i.e don't use polyester or vinylester resin - they contain styrene which will react badly with the polystyrene and dissolve the foam. Yes, it would be plenty, you only need half a teaspoon full at the most - with a couple of drops of hardner added to it - most of it would go to waste.

Are those little flat bottomed plastic boats meant to be a lot harder to roll than a sea kayak? Generally, the wider and deeper the boat, the harder to roll - WW boats tend to be wider and deeper (around the cockpit) than sea kayaks. All that width (think buoyancy) has to be pulled under your hips...

Same hull, same deck etc. Its purely a height difference for paddler size/fitting - from memory, 20mm reduction at the cockpit, tapering to 12mm at the ends (give or take a few microns :-)

It looks like damage from flexing rather than blunt impact or scraping. Was the boat transported on bare (un-padded) roof bars?

You'll find out for certain when you start sanding the innermost hull layer (where the woven cloth / rovings tend to be) - if it all turns to white dust - it's glass (black dust, its carbon), if it's more resistant to sanding and furrs up white - it's diolene (furrs up yellow - it's kevlar).
