Has anyone on here paddled the Stealth 575 or Toura? Interested on comments and feedback.

Haven't paddled one, but I saw both a Stealth fishing kayak and a Kaskazi Marlin laying side by side at Swanage in May.
Nice looking yak, that bow looks like it would cut through the waves.

But looking at the two together, the Marlin caught my eye more.
But not having paddled either, this probably isn't much help?

The stealth is much more stable while standing. The ride takes a little more practice to learn to stand and fish from. I do like the live well on the stealth it works great for keeping your limit of flounder up to about 21". The only problem I have with the stealth is that it is very slow.

I think you are thinking of a different type of Stealth there. The Stealth's in question are not made to "stand" and fish off and is definitely not slow!
