Running a canoe club isnt that difficult whilst at uni, but you need to be willing to put the time and effort in for it to be succesfull.
I ran a canoe club for 2 years, and got nothing but grief, as everyone complained that there were no trips being run,the reality of it was that there were trips being run but people didnt take up the oppertunities, and then when I paddled for my self they expected us to invite them and pick up the pieces.
allin all the trips people did go to were successful however a good following is essential and you could be the start of a successfull thing such as the Leeds canoe club and the likes.

Re: Huddersfield Uni kayaking
Hi Alex,
I'm from LUUCC (leeds uni canoe club) and you'd be very welcome to join our club. We run river trips every weekend which any full paid member is welcome to go on. We also run weekends away with are great fun for both kayaking and socialising. All the info about the club is on our website http://luucc.liquidsatisfaction.com/ and I would encourage you to join our forum and start chatting to everyone if you are interested in joining.
Hope this helps.
Ruby
